Tomato Gazpacho With Paprika and Mozzarella

Gazpacho is one of the most summery and refreshing soups ever! There are many options for its preparation. I want to offer you my beloved! Delicious details and additions in the form of tender mozzarella, brown croutons and smoked salami make it even more interesting and delicious!

Ingredients for 2 portions:

Tomato 2 pcs.

fresh cucumbers 2 pcs.

white onion ¼ pcs.

Garlic 1 PC.

red paprika 1 tsp

salt to taste

black pepper to taste

Mozzarella ½ pcs.

Salami 50 g

Baguette ½ pcs.

Fresh basil ½ bundle

Olive oil 3 tbsp.

STEP 1/4

Make a cross-shaped shallow incision at the base of the tomatoes, pour over with boiling water. Then peel off the skin with ease.

STEP 2/4

Chop the cucumber and tomatoes at random to make it easier to put in the blender, chop the onion and garlic smaller. Put everything in a blender and beat until smooth.

Add salt, pepper and paprika, 2 tbsp. l. olive oil. Put the finished soup in the refrigerator for half an hour to cool.
